Frequent Questions
Can we bring our own wine?
Yes. We encourage you to bring your own wine or beer. Hard alcohol is not allowed. Please drink responsibly.
If we make a reservation, can we invite others to join us?
Yes. You can include others in your party. Please indicate the total number of people in your group when you make the reservation.
I'm allergic to [fill in the blank]. Can you make a special dish for me?
Please see our note on dietary restrictions.
Do you serve free-range meats?
Yes. All of the meat we serve is free-range, grass-fed, and/or organic. We source our meat products from trusted local producers, including McK Ranch and Rain Shadow El Rancho.
How much of your food is locally-sourced?
Somewhere around 95 percent. We have developed strong relationships with several local growers who provide us with top-notch ingredients throughout the year. Please see our Resources page for information about some of our suppliers.
Is your food organic?
While locally-grown food is our priority, organic is certainly important to us. At a typical dinner, around 75 percent of the ingredients will be certified organic or chemical-free.
Do you ever use trans-fats?
No way. We only use unrefined, natural fats for cooking and baking. This includes butter, extra virgin olive oil, beef tallow, lard, and chicken fat.
What kind of cookware do you use?
We use stainless steal stock pots, fry pans, and hotel pans. We never use aluminum or Teflon for cooking.
Do you plan to open a restaurant in the near future?
Yes, we've done it! You can find us here.
How else are you involved in the local food scene?
We produce Living Culture, a television series about food and farming in the Willamette Valley; we host the McK Ranch buying club for the Salem area; we support Marion-Polk Food Share; we volunteer with Salem Harvest; and we are active members of the Salem chapter of the Weston A. Price Foundation.
